Martin & Jean Edwards started Deli Farm in 2005 at their base between the north Cornish coast and Bodmin Moor and have won many awards ever since. The famed culatello (little ass in Italian) is a famed sweet cut of meat from a small section of a pigs rear leg. This version of the classic ham is made with a simple cure and smoked with Apple wood before being slowly dried.
